Ingredients

First in the Bowl

  • 3 ripe bananas (the riper, the better!)
  • 3 tablespoons melted butter (or coconut oil for a vegan version)
  • 1 large organic egg (or a chia or flaxseed egg for a vegan option)
  • 1/3 cup brown sugar
  • 3 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 3 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup unsweetened almond milk (or regular milk)

Second Set

  • 1 3/4 cups almond flour
  • 1/4 cup cassava flour
  • 1/4 cup oat flour
  • 1/4 cup coconut flour
  • 1 1/4 cups rolled oats
  • 1/2 cup chopped nuts (I love using hazelnuts)
  • 1/2 cup chocolate chips

Directions

  1. Preheat your oven to 350°F (175°C) and lightly grease your loaf pan.

  2. In a large mixing bowl, mash the ripe bananas until smooth. Stir in the melted butter (or coconut oil), egg (or chia/flaxseed egg), brown sugar, maple syrup, and vanilla extract. Mix well until combined.

  3. Add the baking powder, salt, cinnamon, and almond milk, mixing to ensure everything is well incorporated.

  4. Gradually fold in the almond flour, cassava flour, oat flour, and coconut flour. Once the dry ingredients are just combined, gently stir in the rolled oats, chopped nuts, and chocolate chips.

  • Let it Cool: This is the hardest part with fresh banana bread, but you need to let it cool before taking it out and eating it or it will fall apart, it still tastes great though!
  • Grease > Parchment: Stale If you prefer to use parchment feel free, but I think this bread cooks better with butter or coconut oil lining your bread pan
  • Serve at Room Temperature: While my kids will eat it either way I prefer it served at Room Temp with a slice of warm butter
